I personally don’t so well with wheat, and have many friends who avoid it as well, but we don’t have any issues with spelt.

Spelt is a cousin to wheat and a really great flour to substitute for wheat in baking.  Other gluten free flours can give you a gummy result, especially for cooks who are less experienced.

Also, spelt is a whole grain and healthier than some flours used to replace wheat flour.  Spelt is also well tolerated by many people who can’t handle gluten.  

If someone has celiac or a wheat allergy they should proceed with caution of course!

  2. strixilish said: Different species, same genus. If allergy is the problem, someone allergic to wheat might be ok with spelt. Celiac sufferers, not so much. I’m non-celiac but gluten intolerant, and will not screw around with spelt.
