Ahhhhhh, soup to the rescue!
There’s nothing better than a steaming bowl of soup on a cold winter’s day! You might love soup as well, but perhaps haven’t ventured into trying borscht.  Maybe you aren’t partial to bright red soup, maybe you like beets but are reticent to take the next step.  Well, I’m here to encourage you to try this recipe!  Borscht is hearty, healthy and delicious. It’s...

I'm part of the Slow Food community on Ithaca College's campus, and we just started a blog about eating well as a college student. I'm assuming that you have quite a few followers that are in college, and was wondering if you wouldn't mind promoting our blog.

Healthy Tuna Melt
When experimenting with a healthy tuna melt I wanted it to be tasty but also low in fat, low in calories and full of veggies, because veggies need to be in every meal. So here’s my version, I think you’ll find that it satisfies your tuna melt desire without sacrificing your healthy eating desire!  Healthy Tuna Melt To make tuna you’ll need: 1 can water packed tuna 1 small...

Nuts about...
Nuts! They’re are not only heart healthy BUT also a great portable snack, a crunchy addition to salads, good for topping oatmeal… the list goes on. I like to buy raw, unsalted nuts.  If I want to toast them I just toss in a dry sauté pan and watch them carefully.  But which nuts are best for you? I’ve read that walnuts, almonds, macadamias, hazelnuts and pecans top the list....

Winter Squash and Apple Soup
Sweet, salty and tangy…creamy, crunchy and cheesy…sometimes a contrast of flavors and textures really makes a dish sing!  I’ve never made a soup with apples before, but my friend Julie introduced me to a fantastic winter squash and apple soup.  It is really thick, smooth and healthy, and the apples give it a nice, tangy flavor to complement the sweetness of the squash. Then you...

Tuna Melt-Worst fast food option!!!
According to the NY Post’s list of the ten worst fast food options, the worst of the worst is a Quiznos Tuna Melt sandwich combo! OK, so maybe you wouldn’t order the combo, just the sub.  And not a large sub, but a regular sized sub.  Well, that selection will cost you 1,070 calories, 650 of which are fat! So, I am working on a healthier version of a tuna sub, and will post it in a...

Lemony "Cheese" Cake (Vegan!)
I was having dinner at a restaurant last night with some friends, and they were sharing a yummy looking slice of cheesecake for dessert. Now, I don’t do well with dairy, and I tried to convince myself that I just didn’t want it, but of course I kind of did… So, with cheesecake on my mind this morning, I set about creating a lemony, vegan version of the creamy, tangy cheesecake...

rubbadubchub-deactivated2011041 asked: Heyy, I love all of your recipes, they are really helpful. I have a little problem, I live with my grandparents and cooking separate meals each time is really difficult, I've tried to get them to eat proper food but they refuse. I've found myself eating what they eat because I can't be bothered cooking two completely separate meals. Any way of getting around this problem?

Comfort Food that's good for you? Yep, healthy egg...
A lot of people like egg salad because it’s tasty and versatile, but generally speaking it is pretty bad for you. HOWEVER, it’s easy to healthify, inexpensive, and you can have it on a whole wheat english muffin for breakfast… on rye bread or gluten free toast for lunch… or on rice crackers for a snack.  Top it with juicy sliced tomatoes or serve with a green side salad. ...

Brunch Time!
Eggs are a delightful brunch time favorite, but lets step it up a notch, shall we? I’m a huge fan of frittatas, they’re beautiful, light, delicious, and easy to prepare.  Also, the combinations of treats to go inside of them are almost endless.  Kale Frittata 1 bunch kale (no stems) 1 sweet onion 6 cloves of garlic 1/5 lb hard goat cheese (Midnight Moon is great) 11 eggs (only 2...

Do you sit on sofas or eat them???
“In recent weeks we’ve seen a big, powerful government agency, a big, powerful person and a big, powerful corporation telling us what to eat. Even with all this big, powerful input, we know nothing that we didn’t know last year.” Just a little quote to spark your interest!  This is Mark Bittman’s article in the NY Times…and you’ll find the answer to the question...

Sauteed Rainbow Chard!
Here’s an easy, delicious recipe for sauteed chard, but you can substitute kale, mustard greens or collard greens if you like.  Mustard and collards are more bitter than chard and kale, so if you are shy about eating bitter just beware! The balsamic vinegar is reduced so it becomes sweet rather than acidic. This recipe serves 2 because leafy greens shrink big time when you cook them, so...

Love those Leafy Greens!!!
Do you LOVE leafy greens?  No?  Then you must learn to! Leafy greens are full of antioxidants, rich in vitamins and fiber, and taste good when you know how to do prepare. And it’s easy!!! We all know (and hopefully eat) spinach, but some people walk away when confronted with leafy greens that they aren’t familiar with.  These are the ones that you should make friends with.  These are...
