Well, since you read my blog, my guess is that you, like me, find vegan muffins, cupcakes and pastries a BIG turn on! Coconut and Sweet Potato Pie
I love sweet potato pie but don’t like the fuss and calories of a traditional crust.  So I’ve come up with this crustless version, which also included another favorite ingredient…coconut. Greek yogurt lovers, rejoice!

Have you guys tried this AMAZING gluten free brownie mix? You MUST. I simply used oil instead of butter, added some dark chocolate, walnuts and coconut, I swear you wouldn’t know they were dairy free and gluten free. FREAKING yum!
